
I love the comfort of nice, creamy potatoes, but sometimes I can feel overwhelmed or heavy from them. I wanted to create a light and nourishing dish that stayed true to being the perfect comfort food I crave.
This is it. The perfect balance between light, satisfying and comforting.

This recipe only requires a pan for cooking the sauce and fish and another pot for boiling the potatoes. You can switch it up with different vegetables, but I love the tangy, slightly spicy quality the radishes contribute.
If you wanted to make this without fish, omit the fish and replace with your favorite vegan meat or pan-seared chicken. If you also prefer to just make the sauce with vegetables, it is absolutely delicious too.
