I am always into finding amazing things to do with a fresh, rich avocado!
This dish is great to serve as an appetizer before a meal, as finger food at a potluck or garden party or a fun snack!
The brightness of the pomegranate along with the spice from the arugula, the sweet acidity of the balsamic & richness of the avocado create a pretty perfect bite.
When you rise in the morning, give thanks for the light, for your life, for your strength. Give thanks for your food and for the joy of living. If you see no reason to give thanks, the fault lies in yourself. -Tecumseh
