Cod & Potato Gratin

Gratin in a wide culinary term that covers any dish that has a browned, crisp topping. This is a twist on a common Portuguese dish of cod, potatoes, olives, herbs & olive oil. I used salted cod to make this casserole gratin, but you could easily replace that with fresh or frozen cod--- just adjust the seasoning as needed!
