I love making soup. Because you are cooking all of your food in the liquid you are also consuming, you do not loose any of the nutrients while cooking. That also means you keep all of the flavor as well!
Using broccoli as the base to create this creamy soup, you are not only getting a delicious meal, but also a powerhouse of nutrients. Broccoli is a rich source of vitamin C, B1, B2, B3, B6, iron, magnesium, potassium, zinc, fiber, is a good source of beta-carotene and is low in calories.
