
Who doesn't love macaroni & cheese? A cheesy wonderful comfort food that is easy to make and easier to eat!
While there are many packages available to easily make macaroni & cheese from, most people don't know how easy it really is to make it at home from scratch. It barely takes longer than making it from a box and requires basically the same ingredients.
What is also wonderful about making it yourself is the ability to choose what you want to add. Whether you want to make it gluten-free, vegan, with different kinds of cheeses, spices, veggies or meat, you are free to make it your own!

Below is an awesome recipe for a basic macaroni & cheese. I used havarti cheese, white pepper and a larger amount of cayenne as well as sprouted organic flour in the sauce, but feel free to make it however you desire. Keep is simple or make it fun!
Here are some of my suggestions for cheeses and combinations:
Parmesan, spinach & artichoke
Gruyere, bacon & chive
Brie, mustard & white pepper
Gouda, creole seasoning & shrimp/sausage
Cheddar, jalapeño & broccoli
Havarti, brussels sprouts & local mushrooms
Mozzarella, sun-dried tomatoes & herbs de provence
To make it gluten-free, use rice flour for the sauce and an organic gluten-free pasta.
To make it vegan, substitute the butter for a vegan butter and the milk with almond milk. Use nutritional yeast and your dairy-free cheese of choice!
Notes: Warm the milk until bubbles form around the edges, then remove from heat.
If you are using the sauce later, place the sauce into a airtight container, pour a thin layer of milk over the sauce, cover and store in the fridge for up to 5 days.
