Moist, seasoned chicken topped with a creamy, rich and slightly sweet morel sauce.
Whether served over rice, pasta or vegetables, this dish was amazing to make and even more so to eat. This recipe does not have to be saved for the limited morel mushroom season each year- swap out the morels for your favorite mushroom to make this sauce whenever your heart desires. I like wild mushrooms best, but play around! What if chicken is not your thing? Replace the chicken with a pan-seared seasoned cauliflower steak, another meat alternative or even just make the sauce over veggies!
Mushrooms are miniature pharmaceutical factories, and of the thousands of mushroom species in nature, our ancestors and modern scientists have identified several dozen that have a unique combination of talents that improve our health. -Paul Stamets
When serving this dish, pair it with lighter, fresher foods. I love fresh asparagus and vegetables, wild rice to give texture and a grounding, earthy flavor, pasta to soak up the sauce...
Now get a bottle of wine & grab your apron to get cooking on this great dish!
Go head and play with your food. It's good for you.
