
I was visiting my sister and her newborn baby the other day when she asked me for one simple request: "I want a pumpkin cheesecake."
Okay, I thought to myself, it's not hard to make a pumpkin cheesecake. She deserves it.
Then she spoke again with a little more intensity, "...but I need it to be gluten-free, nut-free and definitely don't add sugar."
I stood, staring blankly for a moment processing how to create this rich request, then agreed. Challenge accepted!

Granted, this recipe has a crust that is made using cookies sweetened with Agave syrup, but she was okay with a little refined cheat. If you choose to make it completely refined sugar free, a great way is to make your own gluten-free cookie batter to line your springform pan with.
