Otherwise known as Phở Ga, this is a lighter version of the beef phở that you are probably used to seeing at Vietnamese restaurants. Phở is a delicate noodle soup the has a beautiful depth of flavor from a well crafted stock. This recipe takes some time, but most of the it is passive cooking time. When making this, start with quality ingredients. Make sure the chicken is a high quality, happy chicken. In traditional Vietnamese cuisine, they use free-range chickens that are called gà chạy which translates to jogging chicken. Also using fresh, organic produce helps impart the most richness into your stock and finished soup.

If you want to try making this stock with spices traditionally used in a beef phở, feel free! The same spices are used in my vegan phở recipe. Links for those are below the recipe.

Cooking is one of the strongest ceremonies for life. When recipes are put together, the kitchen is a chemical laboratory involving air, fire, water and the earth. This is what gives value to humans and elevates their spiritual qualities. -Laura Esquivel

Now is time for the recipe!
