
Otherwise known as Phở Ga, this is a lighter version of the beef phở that you are probably used to seeing at Vietnamese restaurants. Phở is a delicate noodle soup the has a beautiful depth of flavor from a well crafted stock. This recipe takes some time, but most of the it is passive cooking time. When making this, start with quality ingredients. Make sure the chicken is a high quality, happy chicken. In traditional Vietnamese cuisine, they use free-range chickens that are called gà chạy which translates to jogging chicken. Also using fresh, organic produce helps impart the most richness into your stock and finished soup.
