Quinoa is one of the most protein-rich foods we can eat. Now, when I think of cake, that is not normally what is going through my mind. I want chocolate and decadence, not... protein.
But when given the choice between a cake with only 1 cup of sugar and 2 cups of quinoa that tastes just as scrumptious as other cakes, why would I choose otherwise? I wanted to make a perfected recipe to enjoy and share.
Thus came to be, the decadent Chocolate Quinoa Cake. Exactly what you would crave in a cake, from the texture, flavor, moisture, and oh, extra protein. <-- added bonus!
If you are trying to avoid dairy, feel free to replace the butter with a butter alternative and replace the milk with almond milk.
