Clam & Parmesan Pasta

Rich, buttery sauce with fresh herbs, Parmesan, clams & did I mention pasta? You have to try this...


This dish is my heart's desire food. A rich, buttery sauce, fresh herbaceous parsley, cheese, clams.... did I mention pasta?

With the recipe being so delicious, no one will believe how easy it is to make! When preparing this, I like to throw a little mushroom and chili pepper flakes in with the onion & garlic for a texture and flavor variation. Since this dish is so straight to the point, it is important to use organic, fresh ingredients for richest flavors. Trust me, it is worth it!

Needing a gluten-free recipe? Use your favorite gluten-free pasta! I recommend using Ancient Harvest pasta. It is a gluten-free pasta packing more protein and fiber while holding less sugar per serving than pastas I compared it to. Extravagance advice---- Small dice prosciutto or bacon,mixing it into the sauce just before tossing it with your pasta. What does bacon not make better? Now grab your apron and get to the good eats.


Clam & Parmesan Pasta

* makes 4-6 servings


The Edibles:

  • 1 pound dried pasta (of choice)

  • 1/4 cup olive oil

  • 1/2 cup butter

  • 2 cans minced clams, drain and reserve the juice

  • 1 shallot, minced (or small white onion)

  • 4 cloves garlic, minced

  • 2 tbsp parsley

  • 1 tsp salt

  • 1/2 tsp black pepper, fresh ground

  • 2 tbsp Parmesan cheese, grated

The Process:

  1. Bring a large pan of salted water to a boil over high heat. Add the pasta and cook until al dente (8-10 minutes). Drain well.

  2. In a saucepan over medium heat, place the olive oil, garlic and shallot/onion. Cook until fragrant and lightly browned, about 3-5 minutes. Add in the butter, clam juice and 1 tbsp parsley. Simmer and reduce for 5 minutes until combined.

  3. Stir-in the clams, salt & pepper. Pour the sauce over pasta, add remaining parsley, toss & plate. Serve hot topped with grated Parmesan cheese.

Tips:

  • Wanting an easy potluck dish? Bring this dish! It can be kept covered and served outdoors for a delicious picnic or potluck dish!

  • Since the base is a simple beurre blanc sauce, you can mix your favorite herbs or pepper flakes, minced or thinly sliced, into the sauce just before tossing with the pasta. Want suggestions? Try fresh basil, sage or tarragon. Yum!

  • Add blanched veggies in to make the pasta a little healthier. Toss in some fresh spinach, peas, blanched asparagus or other vegetables before plating.

  • Small dice prosciutto or bacon,mixing it into the sauce just before tossing it with your pasta.

Chef Tip: If your sauce breaks, whisk in a little heavy cream to bring it back together.
